I went back to the bottom of the pile to spend a full day as an underkeeper — feeding birds at dawn, dogging-in, fixing kit, and chasing foxes late into the night. It’s long hours, hard graft, and the kind of work most people never see, but it’s what keeps the countryside ticking.
